Cereal-derived food items have constituted a fundamental part of the human diet throughout history. Global dietary guidelines advocate for the incorporation of whole grains due to mounting evidence indicating that these grains and products derived from them possess the capacity to promote health beyond the mere provision of energy and nutrients. This review will explore the primary chemical constituents found in whole grains that exhibit potential health benefits, including dietary fiber, inulin, beta-glucan, resistant starch, carotenoids, phenolics, tocotrienols, and tocopherols. Additionally, we will delve into the potential role of whole grains in preventing various diseases such as cardiovascular diseases, strokes, hypertension, metabolic syndrome, type 2 diabetes mellitus, obesity, and various forms of cancer.
