One of the first and most noticeable features of early stages of economic development is a marked increase in the demand for food. This is brought about by two factors: a rapid expansion of the entire population and a wide¬spread prosperity that may both raise the general level of income and increase the proportion of the high and middle income groups, especially in the urban centres. Except for changes in age distribution, population growth causes the demand for all types of food to expand whereas rising per capita income creates a much larger demand for particular types of food such as milk and other dairy products.
